Junmai Ginjo sake polished to 60% using Hattan Nishiki rice. 'Moegi' is a name that represents the prosperity of a family, symbolizing good fortune with its layered colors. It has a refreshing aroma that evokes the breath of fresh greenery and a fresh, juicy flavor. This ginjo sake is versatile enough to pair well with a wide range of meals, making it an excellent choice for dining.
From Ube, Yamaguchi Prefecture, Taka challenges the world with its sake brewing. At its core is the Yamada Nishiki Junmai Ginjo. It begins with a modest yet gentle and sweet refreshing aroma, followed by a smooth and expansive umami. All these flavors are ultimately brought together with a crisp finish and a pleasant aftertaste. It has been crafted as a Junmai Ginjo that considers the balance with food.
It has a vibrant aroma with a sense of calm, and a refreshing taste that is well balanced. It pairs well with Japanese cuisine and light dishes, and it is recommended to enjoy it chilled to room temperature.
A dry junmai sake luxuriously made with the king of sake rice, 'Yamada Nishiki.' It has a refreshing dryness while also possessing a moderate sweetness and softness, offering a unique flavor characteristic of Choyofukumusume.
This sake is named after the beautiful gorge 'Nagato Gorge', a scenic spot located upstream of the Abu River, embraced by the Higashinakaguchi mountain range in Hagi City. It maximally brings out the flavor of the rice, skillfully using acidity and spiciness based on richness and umami, resulting in a clean finish with lingering umami that does not become tiresome as it progresses.
