The hand-made soba, with visible black grains, boasts excellent texture and chewiness, and the aroma of the dipping sauce's broth is particularly outstanding. Both cold and warm soba are served with noodles of different thicknesses that highlight their unique characteristics, providing a fresh sense of satisfaction. The carefully crafted kakiage (tempura) also pairs perfectly with the soba.

Upon entering the restaurant, I feel a calm Japanese atmosphere, and I first notice the interesting shape of the counter. Since the style is to place your order at the register first, I can relax and wait for my soba after taking my seat. The flat, coarsely ground 100% buckwheat soba has a rich aroma, and with each bite, the strength of the buckwheat comes through. When I lightly dip it into the broth flavored with bonito flakes, the chewy noodles and the aroma of the dashi spread out in a well-balanced way, bringing me happiness. The tempura with onions and shungiku has a thin, crispy batter, and since it is cooked through to the center, the sweetness of the vegetables stands out. After the meal, sipping the thick soba broth from a pot brings me satisfaction as I enjoy the lingering taste of the soba until the very end.
