This shop quietly stands in a residential area, but the moment you pass through the noren (curtain), a comforting atmosphere envelops you. The chef and the proprietress greet you in a friendly Kumamoto dialect, making it easy to relax even if it's your first visit. The sushi is made with exceptionally fresh ingredients, and as soon as you put it in your mouth, the sweetness of the ingredients spreads. The thick roll with anago (conger eel) has a perfect balance of crispiness and tenderness, making it delicious enough to bring a smile to your face. It seems that the sea urchin and seasonal seafood are delivered directly from fishermen, allowing you to savor the essence of the ocean. The traditional style of arranging sushi on a bamboo mat adds to the charm, and I had a wonderful time.
