This is a preserved food that enhances its shelf life by smoking the ingredients (as described later) while adding a unique flavor. Smoking introduces antibacterial components from the smoke to the food, and the reduction of moisture content due to prolonged smoking increases preservation, concentrating the umami flavor! We have many original menu items that you can only taste at our restaurant. Please come and visit us!
Originally, smoking is meant to remove moisture from ingredients and enhance preservation through salting, but our smoked dishes focus on maintaining the original juiciness and deliciousness of the ingredients with just the right amount of salt.
