The 'Nagoya Cochin Chicken Sashimi' undergoes low-temperature heating sterilization to eliminate bacteria that can cause food poisoning, such as Salmonella and Campylobacter, using fresh Nagoya Cochin, one of Japan's three major native chickens. It is not raw chicken sashimi, but please enjoy it as soon as possible. Additionally, those who are not feeling well are advised to refrain from consuming it.

The Nagoya Cochin is one of Japan's three major native chickens. It was created by crossbreeding the Chinese Kyuukin (formally known as Buff Cochin) with local Nagoya chickens. The rearing period is 120 to 145 days, which is more than three times the usual broiler rearing period of 40 to 50 days. By raising them for a long time and allowing them to exercise, the meat develops a chewy texture and richness. They also lay eggs well, and both the meat and eggs have received good reviews from both domestic and international sources, leading to the establishment of the name Nagoya Cochin. Furthermore, through crossbreeding with brown Leghorns and others, improvements were made, and in the 8th year of the Taisho era, it was renamed and officially recognized as the Nagoya breed by the Central Livestock Association. Therefore, 'Nagoya breed' is the official name. Since then, efforts have been made by stakeholders in Aichi Prefecture and Nagoya City to preserve and develop it. At the same time, the traditional name Nagoya Cochin has been widely passed down to the present day. *A seating fee of 500 yen per person is charged.
