The sake made from Omachi rice is loved by 'Omachists.' The characteristics of Kamo Kinshu sake include a clean acidity, a perfect match with Omachi, and a refined urban taste that offers a subtle gas sensation. The equipment used shows great attention to detail, such as the machine (Yabuta) that presses the finished mash, which is placed in a refrigerated room to ensure quality during pressing. You can enjoy the changes in flavor right after opening and on the second and third days. Find your preferred timing. While Kamo Kinshu primarily uses Omachi, it also incorporates Hiroshima-grown Hattan Nishiki to create a sake that pairs well with summer. Founded in the first year of the Bunsei era (1818), Yama no Jun Sake Brewery has been producing sake for 200 years at the foot of the Inunaki Mountains, by the gently flowing Chikugo River. In 1991, a major typhoon caused significant damage in Kyushu, completely destroying the brewing facility. They lost all 90 tanks and brewing equipment, and at one point considered closing down. However, after two years of suspension, they rebuilt a compact and highly functional sake brewery and resumed production. Since then, they have won numerous awards, including the Gold Prize at the National New Sake Competition and the Fukuoka Prefectural Governor's Award, creating innovative sake that stimulates the senses. The refreshing and crisp 'dry' summer sake is easy to drink this year as well. Recommended pairings include 'summer vegetables' and 'vinegar', such as vinegared mozuku seaweed. After two years of sake brewing under the guidance of the Tajima toji, the sixth generation named the sake he brewed himself 'Ikkon'. The term 'Ikkon' means 'to live fully in the present without being bound by the past or the future.'
Tanizake offers five types of Junmai Daiginjo and two types of Tokubetsu Junmai sake. The Junmai Daiginjo includes selections made with 'Yamada Nishiki' rice and Yamahai brewing method, as well as local Aomori sake rice 'Hanaomoi' with a polishing ratio of 40%.
