A healthy specialty dish packed with natural yam and vegetables. The 'Natural Yam Hot Pot' uses a generous amount of grated natural yam, which is said to have richer flavor and nutrition compared to regular mountain yam. The rare natural yam's grated form is lavishly added to the pot. The gentle-flavored soup, made with the first dashi from Makurazaki's dried bonito and Hokkaido's kelp, transforms the natural yam into a smooth texture. At the end of the hot pot, enjoy the 'dipping soba' with the rich broth made from the umami of vegetables and offal combined with the natural yam's grated form.

This year's 'Akatonbo' evokes the taste of fully ripe fruit, suggesting the arrival of autumn. The soft water blends with rich minerals and the body of rice, creating a flavor reminiscent of mandarin oranges and a gentle citrus aroma. This year's 'Senkin Akatonbo' offers a taste akin to fully ripe fruit, making you feel the 'autumn arrival.' The impression comes through smoothly. The soft water gently envelops the whole, merging with the rich mineral sensation and the body of rice, spreading abundantly. As the flavor approaches its peak, the mandarin-like fruit flavor and citrus aroma seem to rise gently. It is highly refined, possessing an autumn-like nuance while being very easy to drink. I believe this is a sake that is easy to recommend to younger people this autumn.

Before you know it, it's gone; Kamo Kin's autumn is such a sake. Kamo Kinshu's 'Yorisoi Aki Aji' is a seasonal limited sake crafted with a different heating method than regular sake, resulting in a flavor unique to autumn. Unlike the freshness of bottle warming, it has a moderate aging feel with a calm texture. It does not have an aging aroma, and the faint remaining gas adds a lightness. The koji rice used is Omachi, and the sake rice is Nakashinsyuhon. By using whole grain polishing for the sake rice, it brings out a smooth mouthfeel and beautiful aftertaste. When served ice-cold, you can enjoy a refreshing taste, but as the temperature gradually rises, the flavor expands further, with umami and acidity coming together to increase depth. By slowly changing the temperature from cold, you can also enjoy the changing expressions of this sake. A different taste from regular sake, this is Kamo Kin's autumn. With a calm flavor that doesn't become heavy, it makes you want to keep drinking.
