A poem in the Nihon shoki Jingmu toshiki (Chronicles of the Eastern Expedition to Japan). Although it is considered a forgery because it is not an authentic history, there is a story called the Yamazawa Document, which is said to be a compilation of "oral traditions" later passed down to a tribe that was destroyed. The Yamazawa Document also describes how to eat meat, suggesting that the tribe was a hunting tribe, and the "Oji Yamazawa Emishi Yaki" is a modern version of this way of eating meat. The meat is sliced thinly, seared on one side, and placed on top of a broth of boiled nuts and other ingredients, and eaten when the time is right. This is the traditional "Emishi Yaki," but at Brocante, we have given it a modern twist. Sirloin, the highest grade of Shiraoi Wagyu beef, is sliced thinly and grilled on one side only on a teppan. On top of the sirloin, a "special sauce" seasoned to suit modern tastes is poured on top of the sirloin and heated with onions. Cover the sirloin and top with grated daikon and egg yolk. The combination of ingredients, arranged in the style of "yakisukiyaki," is a combination of ingredients that Japanese people can never go wrong with.
