The texture of this dish, made by simmering the rare and tender cartilage from a single pig for a long time, is soft, melt-in-your-mouth, and chewy, making it hard to believe it's cartilage. With a sweet and savory soy sauce flavor, it pairs perfectly with alcohol and is also an excellent side dish for ramen. Sold out, no exceptions.
