For example, tomato sauce. Using aromatic vegetables sautéed until caramelized, homemade seafood broth, and thick, ripe tomatoes sourced from Southern Italy, we simmer it slowly for a long time to concentrate the umami, resulting in a tomato sauce with a good balance of acidity and sweetness.
We offer a la carte dishes that enhance the quality of the food when enjoyed with wine. Our customers often express that while choosing from the menu can be challenging, there is no wrong choice, which we greatly appreciate.
What I keep in mind when cooking is to be serious about the food, to not spare any effort, to provide dishes that I am personally satisfied with, to carefully create each one, and to deliver 'delicious' to our customers. It may seem obvious, but I value this greatly.
The homemade butter sauce made with seafood extracts such as abalone is the key to the flavor. We have received many requests from customers saying they want to eat this bruschetta again.
Cooked at low temperature for a moist finish. A simple combination of thick pork fillet and ketchup sauce, but with a rich umami flavor that is addictive.
Fresh domestic chicken liver simmered with aromatic vegetables, herbs, and spices, crafted for smoothness and to pair perfectly with wine. We have received feedback from customers who usually dislike liver, saying it was the first time they found liver delicious.
Generously made with Aomori Tago garlic. The balance of the umami and saltiness of the garlic and ingredients is exquisite. At Sorriso, we offer three types of ajillo. Each type has a different flavor, allowing you to enjoy according to your mood of the day. Many have said that you must eat ajillo when you come here, and it's not uncommon for the oil to run out. It is definitely one of the dishes you should try.
Generously using fragrant porcini mushrooms, luxuriously added with Parmigiano-Reggiano, creating a refined and deep flavor. It is often said that this is the first time they have experienced such a good balance between the flavor of porcini and cream.
Grilled to a crispy outside and rare inside. The homemade balsamic sauce is made with red wine and has a sweet and sour rich flavor.
