Oatmeal stout brewed with Dutch-processed cocoa and maple syrup
This concoction is hoppy, dry, tart, and very drinkable. It has beauty, poise, and a zest for life that you don't often find in one so mild. A kettle sour, Hop Tart is mashed and lautered normally, but then acidified (soured) in the kettle with Lactobacillus. After reaching just the right acidity, the lactic action is halted and our American Ale yeast is allowed to take over and ferment the remainder. A healthy dose of wheat smoothes out the edges, and a plethora of hops are added just for aroma - a wonderful lemon, lime, grapefruit, and pineapple aroma that comes from a combo of American and New Zealand hops. I can't seem to stop drinking this one!

Using only traditional ingredients, Switchback Ale is a reddish-amber ale which is particularly well-balanced, allowing for complexity of flavor coupled with an unusually smooth and refreshing character. The traditional Vienna Lager style originated in Austria, and then continued in Mexico after a short wave of Austrian occupation, in the late 1800s, brought with it an influx of European brewers. Smooth and drinkable, yet complex in its malt profile, this amber lager is a joy to drink on any occasion. Ours has exactly 8 different kinds of malts, for a wonderful malt complexity, and a traditional Hallertauer noble hop presence, which helps dry out the finish and makes you want to come back for more. This concoction is hoppy, dry, tart, and very drinkable. It has beauty, poise, and a zest for life that you don't often find in one so mild. A kettle sour, Hop Tart is mashed and lautered normally, but then acidified (soured) in the kettle with Lactobacillus. After reaching just the right acidity, the lactic action is halted and our American Ale yeast is allowed to take over and ferment the remainder. A healthy dose of wheat smoothes out the edges, and a plethora of hops are added just for aroma - a wonderful lemon, lime, grapefruit, and pineapple aroma that comes from a combo of American and New Zealand hops. I can't seem to stop drinking this one!
