You can choose your preferred level of doneness (hard or soft). If you leave 3 to 4 pieces of grilled thigh and order 'yakimeshi' from the staff, you can also get 'Miyazaki Jidori Fried Rice'! The staff will stir-fry it with the juices and fat that seep out from the jidori chicken.
The unique crunchy texture of the free-range chicken releases more umami the more you chew. The special dipping sauce is the result of repeated trial and error! It tastes even better when eaten with the accompanying sliced onions.
