The thin soba noodles have a wonderful aroma and pair excellently with the dipping sauce. They have a light texture that allows for a smooth and enjoyable eating experience. The tempura in the tempura soba is crispy, with shrimp and vegetables that can be enjoyed even with just salt. The stone-grilled duck soba is fun to cook yourself, and the freshly ground sansho pepper enhances the aroma. The duck meat has a tender elasticity, and the more you chew, the more refined umami spreads. The plump oysters in the soba also have a great flavor, and in the end, you can be satisfied all the way to the soba broth.
