The soba used in okonomiyaki is made with fresh noodles from 'Isono Seimen', a manufacturer specializing in okonomiyaki noodles. By frying the special noodles until crispy with oil, we create a fragrant and crunchy texture that pairs well with okonomiyaki sauce.
The sauce uses 'Michan's Original Okonomiyaki Sauce', which was completed after half a century. This rich and mellow sauce is undoubtedly the key to the flavor of 'Michan Sohonten'. It is also very popular as a souvenir.
One of the charms of 'Micchan' is the skill of craftsmen who can bake up to 800 pieces in a day.
