Brewery: Dewasakura Sake Brewery (Yamagata Prefecture) Sake Meter Value +5 A fragrant ginjo sake that has spread the name of Dewasakura to the world! Characterized by fruity ginjo aroma and rich flavor. Only the center part, known as the shinpaku, of the polished rice is used. A floral aroma with a deep flavor characteristic of Yamada Nishiki.
Brewery: Tosa Crane Sake Brewery (Kochi Prefecture) Sake degree +4. A rich flavor characteristic of Junmai. A crisp taste created by refreshing acidity. This is a delicious dry Junmai sake unique to Tosa Crane. The robust flavor enhances the deliciousness of the dishes.
Brewery: Asahi Shuzo (Niigata Prefecture) Sake degree +61830. A very popular sake named after the original shop name 'Kubotaya' from the founding year of Asahi Shuzo. It has an impressive aroma reminiscent of apples, white peaches, and fruit candies. The taste is smooth without any roughness, and it is described as 'easy to drink,' representing a clean and crisp dry sake that is pleasant to sip.
Brewery: Otoko Yama (Hokkaido) Sake Degree +4. Namamoto is a brewing method that cultivates a unique yeast of the brewery through traditional handmade techniques, and currently, only a few breweries implement this method. The Namamoto Junmai made only from rice and rice malt is a sake that never gets boring. It has a smooth finish with a mild umami and a rich flavor, a gentle clarity, and is a proud masterpiece.
