In Denmark we are very fond of Christmas beers. In fact, most of December goes with drinking Christmas beers while chewing on fat duck, pork roast, red cabbage and herrings left in vinegar for months. Jule Mælk. Our so far strongest beer, bumped up to 15% ABV and loaded and loaded and loaded with lactose, just until it couldn't get any more heavy. You could say this is the Foie Gras force-feeding edition of a beer. This Grisette-style beer was crafted with foraged sumac and mixed cultures from both breweries. After primary fermentation, it was moved over to one of our horizontal tanks to age. The result is a complex blend of sour, earthy and acidic. Created in partnership with Blackberry Farm Brewery (Walland, TN) as part of our Friendship Brew project. Available in 750ml
STARGATE begins as a custom blend of 9-10 month old spontaneous solera sour golden ale base beer with 100% coolship caught microbes. Whole Peaches from the western slopes of Colorado are added to the blend in Bourbon Whiskey Barrels, creating a delicious, fresh peach flavor that plays wonderfully with the delicate apricot notes produced by our native yeast. Moderate acidity is backed by subtle hints of deep bourbon whiskey and oak vanillin. This beer will develop in the bottle for years, however much of the fruit flavor will diminish or change, so we recommend enjoying at least one bottle fresh if you do intend to cellar. French-style Saison brewed with French Aramis and Nelson Sauvin hops, in celebration of the 40th anniversary of Food & Wine Magazine. Available in 750ml
Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25, 000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the "best before" date! The soft, mildly sour berry taste, harmonises with the oak barrels' aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime. Available in 25.3oz Bottle
Our award winning modern take on a traditional Flanders red is a native fermented Belgian-inspired sour red ale brewed with North Carolina grown heirloom Wrens Abruzzi rye malt and fermented in Biltmore Estate wine barrels. The beer has a bright acidy and is filled with dark fruit notes rounded out by oaky barrel character. The beer is fermented with a mixed culture strain from SouthYeast Labs and our house blend of Brettanomyces yeast. The deep ruby red color of this beer is a joy to behold. Available in 16.9oz Bottle
Mead with Banana and Spices 2017 Silver Medal Winner at the Mazer Cup International Mead Competition. Tasting Notes: Rich banana, vanilla and honey sweetness with caramelized sugar flambe'. Coffee aroma on the nose but not present on the palette provides depth and balance. It is said that once, long before the birds and the bees, there was the Banana and the Bee. The rowdy Banana came from the wrong side of the tracks, so it was instantly a scandalous relationship. Things were hot for a while, practically a flambé. Their love didn't last long, though, as it was steeped in good times and a heavy dose of a certain Caribbean libation. After the flames settled settled they decided it would be best to stay BFF's. Put on your fireproof pants, folks—this one's got muscle. A slightly smoky, raisin-sweet Belgian-style Quad infused with guajillo and fire-roasted fresh habanero chili peppers, then aged in Four Roses bourbon whiskey barrels for 9 months before being blended to a perfect balance of sweet and heat. Less Dots is a farmhouse ale aged on the "spent" black currants from Jester King More Dots. Available in 750ml Bottle
To make More Dots, we created a blend of Jester King Das Überkind with an average age of around one year. Das Überkind is our un-fruited barrel aged wild ale brewed with well water, local grain, and aged hops, and fermented with our mixed culture of brewers yeast and native yeast and bacteria. We racked Das Überkind out of oak barrels and into a stainless steel tank, then refermented the blend with 2,000 pounds of black currants from Samson Farms in Everson, Washington! After the fruit refermentation reached total dryness, we packaged the beer into bottles and kegs for natural conditioning / refermentation. More Dots is 5.8% alcohol by volume, 10 IBU, 3.1 pH, and has a finishing gravity of 1.004 (1 Plato). Available in 750ml Bottle
Noble King is a medium strength, highly attenuated, unspiced farmhouse ale brewed with an abundance of organic noble hops, and fermented with wild yeasts from the Texas Hill Country. Unfiltered, unpasteurized, and 100% naturally conditioned. Available in 750ml Bottle

This flavored amber farmhouse beer was brewed with roasted burdock root from our garden then aged for nine months in puncheons that previously held red wine. Earthy notes of chocolate and vanillin with a light, tart cherry-like finish. Available in 750ml
Belgian farmhouse ale brewed with 5 gallons of locally harvested chanterelle mushrooms. earthy apricot aroma complements a spicy medium-bodied beer with a dry finish. Available in 750ml
A dark ale aged in bourbon barrels with a mixed culture of yeast and bacteria, before being fruited with local NC blackberries. Lonesome Ellen has intense barrel character, with notes of vanilla and baking spices, followed by dark fruit and finishing acidic and dry. Available in 16.9oz
