The main dish changes weekly and includes dishes such as hamburger, fried chicken, and ginger pork, with plenty of side dishes to accompany the rice. The side dishes feature seasonal vegetables carefully selected by a buyer from the group company's pesticide-free vegetable EC site 'Kokonomi' from farmers, prepared with care to create a gentle taste. Handmade dressing and homemade pickles aged in a homemade bran bed utilizing the bran produced from daily rice polishing, featuring a variety of colorful vegetables to support a healthy lifestyle. Chiba prefecture's oil-coated salted mackerel, in pursuit of the 'gentleness' that aligns with Marimo Shokudo's concept, is carefully desalted and then marinated in sake lees to enhance its deep flavor. It is grilled to a fragrant finish, so when you take the first bite, chewing with the skin, the aroma that pierces through your body as the name 'grilled aroma' suggests, stimulates your appetite. To refresh your palate, enjoy the matured rice bran pickles made in-house as a chopstick rest, and cleanse your mouth with a gentle miso soup finished with dried bonito flakes. This dish is sure to create the illusion that each subsequent bite is as satisfying as the first, making it irresistible.
By slowly sautéing fragrant vegetables until they turn a caramel color for over 5 hours, the umami of the vegetables is condensed. We finish the roux by adding carefully extracted bonito dashi that has been simmered for over 3 hours and original spices. The main chicken is marinated in salt koji, carefully grilled, and then added. Finally, the flavor is determined by adding onion koji and 'shottsuru,' which is one of Japan's three major fish sauces. This is the Mari Mo Dining-style curry. Seasonal vegetables are fried, grilled, and scattered in various colors, creating a curry that is gentle on the body.

The 'Marimo Bento' for employees started in 2019. It began when the president of Marimo saw employees eating cup noodles and wanted them to have a healthier lunch. At Marimo Shokudo, we faithfully recreate and enhance this 'Marimo Bento' by serving it with miso soup made with our special dashi and homemade pickled vegetables, delivering it as the 'Marimo Set Meal.'
