The whale sashimi and teppanyaki are truly delicious. The boiled red shrimp has a firm texture and pairs well with the gentle-flavored soup. If you leave the head in the pot to extract the umami, the final rice porridge becomes surprisingly rich. You can compare different parts of the whale, from lean meat to fatty cuts, and each flavor is distinctly felt. The game meat is also tender and easy to eat, and the Ezo deer leaves a strong impression even when eaten as is. You can also feel the warmth of the staff, which further conveys the charm of the dishes.
