Our specialty fried tonkatsu was born from the chef's sudden inspiration. It features a pork fillet cutlet topped with 'mayonnaise', 'ginger', and 'plenty of green onions', all drizzled with a broth made from Rishiri kelp and Kagoshima Makurazaki bonito flakes. This is Chami pork from Kagoshima, raised on a fermentation bed weighing 130g. The fat, fed with sweet potatoes and tea leaves, has an exceptional sweetness.
