This meat comes from the shoulder area of a single cow and yields only about 2 kg. It is a tough cut, so it is often mixed with other cuts, but in Hiroshima Prefecture, it is famous for being sliced thin and eaten on its own. It is characterized by its crunchy texture and sweet fat. At Enmaru, it is served with a refreshing citrus sauce.
