This is a sake selected by the owner of Spicy Master, who loves sake, that pairs well with Sichuan cuisine. While sake and Chinese food have a great compatibility, this pairing is still not widely known. At Spicy Master, we offer regular sake, seasonal sake, and various types of sake to enjoy with authentic Sichuan dishes.
Iwate Prefecture, Kawamura Sake Brewery (the rice used varies depending on the season). The area of Ichinoseki in Iwate Prefecture is the hometown of the largest group of toji (sake brewers) known as Nanbu toji. This sake is carefully bottled one by one, featuring a pleasant acidity that leads the umami of the rice. ・Glass (50ml)…300 yen ・Tokkuri (90ml)…540 yen ・Tokkuri (180ml)…1,000 yen Comment from Mala Sensei: It pairs well with light salty cold dishes and stir-fries. This nigori sake has a rich flavor but is not overly sweet, with a dry aftertaste. Comment from Mala Sensei: Recommended for women and beginners of sake. Although it is nigori sake, it is not too sweet. Pairs well with dishes that have sansho flavor, such as saliva chicken, mapo tofu, mala boiled fish, and Sichuan twice-cooked pork.

Sogen Brewery, located in the Noto region, is said to be the birthplace of Noto sake brewers. The rice is polished to the junmai ginjo class, resulting in a sake with a moderate body and a clean finish. Named with the aim of creating sake that is cherished and valued for generations. Each bottle is hand-filled, resulting in a rich flavor where the umami of the rice blends with a unique acidity. Comment from Mala Sensei: The acidity pairs very well with spices and fried foods. Soft shell crab, spiced fried large shrimp, fried chicken, etc.
Kochi Prefecture Kameizumi Sake Brewery - Glass (50ml)…300 yen, Tokkuri (90ml)…540 yen, Tokkuri (180ml)…1,000 yen. Rich sweetness and refreshing acidity create a fresh taste. A flavor with a significant impact that is unforgettable after one sip. This is a year-round nama genshu. Comment from Spicy Master: Similar flavor to Chinese Baijiu. Pairs well with dishes that have strong acidity, such as black vinegar jellyfish, beef in golden sour soup, and cumin stir-fried lamb.

Maruo Main Store is located to the east of Konpira-san in Sanuki, Shikoku. The flavor developed through aging is deep and rich in character. Comment from Mala Sensei: It has a very substantial umami.
