Harvested by hand as soon as it reaches optimal ripeness in early October, it is placed in small wooden barrels to maintain the integrity of the bunches and avoid damage to the grapes. In the local area of Saga, we created a sake rice (Shuku) unique to Kyoto and had it brewed into Daiginjo at the Fushimi brewery (Eikun) of Saito Shuzou. It was named after the famous moon spot in Saga (Gessho Moon Award). It is a refreshing sake that you won't get tired of no matter how many times you drink it.
The producer's philosophy is that understanding the personality of water and transforming it into sake without discomfort is the essence of sake brewing. It allows you to clearly feel the personality of the water. With a calm and pleasant aroma, the soft mouthfeel combined with a light sweetness allows you to sense the strong connection between sake and water. The light mouthfeel and drinking experience, due to the low alcohol content, makes it a great first cup for those unfamiliar with sake.
In contrast to Yamada Nishiki, which competes with a soft flavor spread, this Aiyama is the type that competes with overall sharpness. Even so, it firmly possesses the characteristics of Matsu no Tsukasa. Aiyama, which dissolves easily at the fermentation stage, has successfully extracted a transparent umami from this difficult sake rice, making it an exceptional product.

This is a craft chuhai made with straight juice from 'Joshu Hakuh' plums cultivated in the Aotani plum grove of Kyoto Yamashiro, along with plum puree, plum spirits, and carefully selected barrel-aged shochu.
