As a point of pride, vegetables are hand-cut, and the oil used is first-pressed canola oil. The natural flavors of the ingredients and the skill of the artisans come together. The key is the carefully simmered homemade broth made with plenty of top-quality dried kelp from Rishiri, premium dried bonito flakes from Makurazaki, and mackerel flakes from Ehime. The meticulously prepared broth enhances the umami of the ingredients, creating a golden flavor. Our proud fish cakes cherish the original taste and texture of the ingredients. We incorporate seasonal ingredients, providing a bowl that never gets boring no matter how many times you visit.

To maximize the delicate flavors and aromas of the fish, we allow no compromises in the processes of filleting, aging, and temperature control. The skilled artisans' technique of slicing each piece with precision brings a difference in texture and mouthfeel.

The kamameshi is cooked all at once using oden broth, and the rice is made from 'Koshihikari' directly sourced from farmers in Awaji Island. The umami and sweetness of the rice spread in your mouth. Additionally, we use the secret oden broth from Kurokama family. By cooking it all at once in a special pressure cooker for kamameshi, you can enjoy the flavors that bring out the ingredients.
