Committed to traditional techniques and hand-made koji. Kodomajozou is a historic brewery founded during the Edo period under the original name Fujiyaya. It produced Imo shochu named Fujiyu, inspired by Izu, the birthplace of the former lord of the Obi domain, the Ito family. Over time, during the Heisei era, the brewery was in a state of suspension for a while. I studied brewing at Tokyo University of Agriculture, just like my current representative father, Kazumaru Kazuo. After graduation, I returned to the sake brewery Miyazaki in Saitama and trained at two shochu breweries. In 2001, my family moved to Nichinan, and I inherited our brewery, Kodomajozou. With the dawn of the 21st century, new shochu production began again. With the continuation of the history of the two breweries in our hearts, we are all working together to deliver Japanese culture and the national liquor, shochu, to everyone, with the theme of our brewery, 'Brewing with Dedication,' on our backs.

If we were to express the feelings that Kuroki Main Store puts into shochu making in one word, it would be 'Shochu Hitomune.' This not only signifies the continuous production of shochu but also embodies the will to protect and inherit the traditional culture rooted in the land that is shochu. That is why Kuroki Main Store starts with agriculture for shochu making. They till the land, sow seeds, and carry out everything from cultivation to harvest by their own hands. Furthermore, the waste generated during the manufacturing process is effectively utilized as organic fertilizer, returning the blessings of nature back to nature. Since our founding, we have been using traditional ceramic pots to steam and produce sweet potato shochu in wooden barrels made from the local specialty of Nichinan, Obi cedar, making us a representative shochu brewery of Nichinan City.
This is a rich-flavored sweet potato shochu that utilizes the unique characteristics of black koji, resulting in a mellow taste that is aged and stored.
Nichinan City is home to Inoue Sake Brewery, which has a large jar as its landmark in Nango. The brewery's premises are overflowing with rich water, which has also been designated as one of Miyazaki's famous waters. The shochu made using this famous water is distilled under reduced pressure, a method that has become common today. In 1983, when management became difficult, they developed their own reduced pressure distillation technique and succeeded in producing the first 100% reduced pressure distilled sweet potato shochu in Japan, saving the company. 'Culture is only culture if it is preserved. If management is not done properly, even wonderful culture cannot be preserved. I often do unusual things, so at that time, reduced pressure distillation was considered eccentric,' said President Tokuo Terada, who spoke with a nostalgic smile.

'Kuro Kirishima' is a genuine sweet potato shochu made from sweet potatoes 'Kogane Sengan' grown in the Shirasu plateau of Kyushu and the clear underground water 'Kirishima Rekkasui' from the Kirishima mountain range. It was first released in 1916 by the founder of Kirishima Shuzo, Yoshisuke Enatsu, and recreates the flavor of black koji brewing. It features a rich sweetness from the black koji and a crisp finish.
