We carefully processed domestic beef tendon and simmered it slowly until it became tender. This is our proud dish.
This is the proud meat udon of 'Shige'. Please enjoy dipping the tender beef brisket, seasoned with a sweet and spicy flavor, into the dipping sauce with a hint of chili oil. It comes with a raw egg, so you can change the flavor to your liking. It can be served with either soba or udon.
We carefully prepare domestic beef tendon meat over a long period of time. Please enjoy it with yuzu pepper or shichimi togarashi to your liking.

This is a mellow-tasting sweet potato shochu made from Kagoshima Prefecture's golden senkan and black koji, aged for over a year in a ceramic pot.
Brewed with barley and black koji, it was intentionally coarsely filtered to retain the flavor of the ingredients. Furthermore, it is an aged liquor that has been matured for over 3 years, so it has a strong barley flavor.
Soba made without using any binders like wheat flour is called 'Juwari Soba', and this is a 100% soba shochu. We recommend pairing it with soba tea or soba broth.
