Our so-called negima (regular yakitori) is made from a mix of thigh and bone meat. Two different tastes spread in your mouth. Kashiwa" is the name for chicken in the Kansai region. Originally, chicken and duck came from the Kansai region to the Kanto region, and Yakitori Brochette still uses this name to this day out of respect for the food culture of the region.
