We used high-quality spring water (soft water) from Annupuri in Niseko, along with botanicals sourced from Niseko Town in Hokkaido, including willow and Japanese mint. The result is a clear and smooth gin that has a solid flavor profile with a light citrus aroma, making it easy to use as a base for cocktails like gin and tonic or martini. A standard of Shakotan Gin. A rich distilled spirit from the abundant land, the Ainu people referred to it as the 'Goddess of the Forest' for the 'Akaezomatsu' (Red Spruce). Its beauty, standing tall and dignified without shedding leaves even during the harsh winter, symbolizes our hope. 'KIBOU' is a rich distilled spirit based on the deep orange aroma of the Akaezomatsu, made from botanicals sourced from Hokkaido and Shakotan Town.
A smooth gin with a smooth mouthfeel that adheres to an old gin recipe. The base spirit is derived from wheat. The addition of Takasu blueberries to the botanicals, which follow the good old recipe, gives it a hint of sweetness and wildness. Concrete tanks are used for addition and stirring to achieve a round and pleasant texture. Because it is a classical gin, it can be enjoyed freely in a variety of ways.
