Red and White each
・Only the lean fillet of steak is used. Our craftsmen carefully grill each piece on a lava plate. The beef is sourced from grass-fed cattle raised solely on New Zealand pastures. To enhance the refreshing umami and silky texture of the lean meat, we pour dashi over it just before serving. This is the main dish of Seiki Hitoshina, the [Dashi Steak]. ・The clay pot rice is made from rice carefully cultivated by our producers, which we purchase in its brown rice state and store in a temperature-controlled brown rice storage facility. We mill only the amount needed for that day every morning. After that, we carefully wash the rice and cook it in a clay pot. Refills are available. ・The miso soup is a carefully crafted dish that uses seasonal vegetables and seafood that are fresh that day. We pursue the types of dashi and miso used in the miso soup. ・Homemade Nukazuke is made using the rice bran that comes from milling the rice, which we pickle in-house. We prepare about three types of carefully selected vegetables. Refills are available. ・Tea: First, when you take your seat, we will serve you tea. We also have cold tea available.
