This is a sashimi of today's aged fish delivered by a fresh fish aging expert who has mastered the technique of aging fresh fish, paired with sake chosen by our sake sommelier to complement it. Please enjoy this perfect marriage.
Our shop mainly offers oysters that grow for one year. The characteristic of one-year oysters is that, unlike the bitterness and unique smell of oysters that take years to grow large, they have a refreshing sweetness and umami, with a plump and cute round shape similar to scallops, without any strong aftertaste. The lingering umami remains in the mouth for a very long time. You can enjoy the authentic taste of oysters, as if they were just harvested from the sea, in Gifu all year round. Our shop provides oysters without washing them with tap water, using seawater instead, ensuring safety and peace of mind. Finally, you can enjoy them twice by mixing the umami-rich seawater left in the oyster shell with sake in a 1:1 ratio.
