Miyogiku, known for its sacred sake brewed at Kashihara Shrine, is a long-established brewery founded in the third year of the Kōhō era (1718). The freshly pressed sake, made from Fukui-grown Gohyakumangoku rice and available only during the peak season, boasts a fresh taste characterized by its roughness and rich depth.
In the brewery's garden, there is an ancient plum tree that is over four hundred years old, and in spring, nightingales come to sing. The name of the sake is derived from this. Upholding a quality-first principle, the flagship product 'Koubai' boasts a rich flavor. Please enjoy this very limited production of nama sake.
At the foot of Mount Katsuragi, in the picturesque area of Kujira, is the Shinomine Brewery, Chiyo Sake Brewery. The name 'Shinomine' is another name for Mount Katsuragi. The Junmai Ginjo Rokumaru series offers a fruity and juicy drinking experience.
Katsuragi Brewery, located near the mythical Takamagahara at the foot of Mount Kongō, brews the dry sake 'Sae' using the subterranean water from the Kongō and Katsuragi mountain ranges, which has been flowing for ages. The sake is finished to perfection, with a refreshing and expansive umami flavor of rice.
Imaizumi Sake Brewery, boasting a 350-year history at the foot of the sake deity, Miwa Shrine. It has also served as a stage for the Bunraku play 'Imoseyama Onna Teikin.' This is the hottest brewery in Nara, where history and innovation blend together!
Miyoshino Brewery, located by the Yoshino River, is a unique sake crafted with passion by a young toji (master brewer) featured in numerous magazines. Thanks to its rare method of yeast-free quick fermentation, this sake offers an exceptional taste experience with rich flavors and outstanding crispness.
A carefully brewed drop made using Yamadanishiki rice cultivated in the home fields of Kushira, the origin of this famous sake. With limited production, this sake is becoming increasingly difficult to obtain as its name gains national recognition.
This year, three brands won the gold medal in the Junmai and Junmai Ginjo categories at the sake competition, making this brewery a hot topic! While sake from Kochi is said to be dry, Bijofu is a wonderful sake that harmoniously balances umami and acidity even within the dry category.
A powerhouse with a history of 13 gold medals at the National New Sake Appraisal since the Heisei era. The sake brewed with Akita Sake Komachi, a rice suitable for sake brewing cultivated by the brewers themselves, has a clean taste reminiscent of fruit tea without any off-flavors. This sake becomes even more delicious with aging.
This is a particularly popular Junmai Ginjo sake from the renowned brewery 'Shimeharitsuru' in Murakami, Echigo. It features a fragrant aroma and a mellow taste, characterized by a crisp and refreshing aftertaste that makes it an easy-to-drink, dry sake.
