My love for cooking led me to open 'Kikanwa' in 1995, and I have continued to this day. My hobbies include cooking, fishing, and visiting hot springs.
◆ A5 black-haired Wagyu beef selected by the owner with 25 years of experience. Since there are always individual differences in meat, 'selection' is very important. Rather than focusing on branded beef, we simply pay attention to whether it is delicious or not when sourcing. This allows us to serve meat that is worth more than its price. Most of the meat we source is tender A5 grade. When determining meat quality, the criteria include the marbling, the color of the fat, and whether the meat is firm. Of course, if the chef is not satisfied, we will absolutely not source even A5 grade black-haired Wagyu beef!!
◆Through 'long-term low-temperature aging (wet aging)' for 30 to 60 days, the umami is concentrated. We serve the meat at the moment when the umami is most concentrated. It is meticulously managed at the temperature limit where the meat does not freeze. This awakens the meat's natural instincts, allowing the umami to bloom.
