I have been continuously pursuing the simple question, 'What is delicious grilled meat?' and have thoroughly researched everything from meat management to seasoning. My love for cooking led me to open 'Kikanwa' in 1995, and I have continued to this day. My hobbies include cooking, fishing, and visiting hot springs.

◆ A5 black-haired Wagyu beef selected by the owner with 25 years of experience. Since there are always individual differences in meat, 'selection' is very important. Rather than focusing on branded beef, we simply pay attention to whether it is delicious or not when sourcing. This allows us to serve meat that is worth more than its price. Most of the meat we source is tender A5 grade. When determining meat quality, the criteria include the marbling, the color of the fat, and whether the meat is firm. Of course, if the chef is not satisfied, we will absolutely not source even A5 grade black-haired Wagyu beef!!

◆Through 'long-term low-temperature aging (wet aging)' for 30 to 60 days, the umami is concentrated. We serve the meat at the moment when the umami is most concentrated. It is meticulously managed at the temperature limit where the meat does not freeze. This awakens the meat's natural instincts, allowing the umami to bloom. Compared to non-aged meat, aged meat has 5 to 6 times the amount of umami components!!! Determining the optimal aging period and temperature for each type of meat is a professional skill.

◆Essential for grilled meat with sauce is the 'Momi-dare' that marinates the meat. The exquisite balance of the five key elements of sauce flavor: 'umami', 'sweetness', 'spiciness', 'aroma', and 'richness' is extremely important. After extensive research, we arrived at a secret Momi-dare that blends 14 different seasonings and condiments. Moreover, we are committed to the traditional method of 'Ichijo-zuke', where we season each time without making a batch in advance. This allows us to subtly control the seasoning according to the meat quality, customer situation, season, and weather.
