The soba noodles are made with 100% 'Dewa Kaori' from Yamagata, offering a pleasant aroma and a smooth texture. They are served chilled, and you can really feel the firmness. The dipping sauce has a clear umami flavor, and eating it without soaking the noodles too much creates a good balance. The best way to enjoy the wasabi is to place a little directly on the noodles, which enhances the flavor of the soba. The small side dishes and pickles are also delicious, and pairing them with the daily rice makes for an even more satisfying meal. The meal concludes with soba-yu (the hot water used to cook the soba), and the transition from a daytime soba shop to a nighttime lounge is quite interesting.
