This is a standard menu item for the one serving set of Sakura Hot Pot. The sauce, made with a unique red miso, is surprisingly light despite its appearance, making it enjoyable without getting boring. In addition to horse meat, you can also enjoy plenty of vegetables. Many people choose to order udon as the final dish.
In the case of a course menu, udon is included in the set.

The horse meat used is domestic horse meat from Nagano, Shinshu, so it is very tender even without being called rolled loin. You can enjoy the taste of the meat itself with condiments and sauce.

This is a very rare horse offal stew. The seasoning uses Atsumiya's blended red miso, and while it has a deep color, it is very light in saltiness, resulting in a delicate flavor typical of Japanese cuisine.
