This is the signature menu item since the establishment of the restaurant. The term 'Kasane' comes from the fact that we provide a broth made by 'layering' seafood and pork bone. The soup has a delicate balance where the seafood and pork bone each assert their flavors while harmonizing perfectly.
Topped with chashu in kasane soy sauce. This bowl features a large chashu that crosses over the bowl, making it eye-catching.
A bowl arranged in the style of Ittouya, featuring Nagaoka Ginger Soy Sauce Ramen, one of the five major ramen dishes of Niigata. It uses a broth with a strong ginger flavor blended with several types of soy sauce. Thick menma and large chashu are also present.

The dipping sauce for the dipping noodles is based on 'seafood' and 'pork bone'. What stands out is the wide, flat, hand-made noodles. These custom noodles are designed to hold the dipping sauce well. It is topped with perilla leaves and myoga, and the noodles are sprinkled with sesame, creating a Japanese-style bowl.
