A signature dish of the restaurant. With a focus on lamb meat, it is carefully prepared to fully enjoy the rich flavor of the lamb. Coated with herb breadcrumbs and baked to a crisp, it is a luxurious dish served with an original demi-glace sauce that takes four days to make.
The sweetness of lamb and cabbage is a perfect match. The light tomato-based soup is enhanced with the aroma of cumin, captivating with its rich flavor. This dish is popular all year round, whether in summer or winter.
The fragrant sauce made with organic basil grown on the farm run by the chef's grandparents in Azumino City, Nagano Prefecture, is exquisite. During the Obon season, the whole family participates in the harvest, and they take great care to make a year's worth of sauce there.
