Using carefully selected Koshu, it is brewed using the maceration-carbonic method, extracting umami and color from the skin and seeds, and created through secondary fermentation in the bottle. It has aromas of orange, fig, and pear with delicate and creamy bubbles. The dry taste is primarily characterized by a refreshing acidity, and the pleasant bitterness pairs exquisitely with fresh spring rolls, such as those with steamed chicken and sweet chili sauce. This is a sparkling wine in orange color that is currently gaining attention.
Italy 2018 was a year characterized by the ripeness of fruit, softness of acidity, and a sense of balance not seen in previous vintages. By delaying the harvest as much as possible, the fruit became fully ripe. The grapes, benefiting from noble rot, were meticulously sorted, including the selection of rotten fruit. After destemming, the grapes were left with the skins and seeds for 3 months, then pressed and aged in large barrels for 36 months, followed by 18 months in the bottle. This is an ideal Ribolla Gialla with a delicate yet profound wine quality, and a richness and aroma derived from the fruit.
Italian Malvasia Istriana with thick skins and strong aromas. It emphasizes 'how to maintain a healthy state for a long period and ripen on the vine' rather than excessive concentration. It is not just about increasing sugar levels; the overall concentration comes from the ripening of the skins, seeds, and stems, which balances acidity and tannins, resulting in a taste that not only has volume and fruitiness but also complexity, depth, and a well-maintained acidity from noble rot.
Made using Japanese Kerner and Sauvignon Blanc. It is crafted to aim for a gentle flavor that seeps into the body. The maceration period for each variety is about one month. While embodying the nuances of orange wine, it retains the characteristics of the varieties, and by mixing in a small amount of Pinot Noir skins during maceration, it adds further complexity. The fresh atmosphere is a blend of the muscat aroma of Kerner and the ginger-like nuances of Sauvignon Blanc.
