Steak made by a former French chef. This steak is finished tenderly using the trending sous-vide cooking method. The sauce is generously made with locally sourced apples from Nakano City and finished with port wine (a fortified wine from Portugal).
When it comes to the king of pasta, it's blue crab pasta. This is a must-try dish. At our restaurant, we enhance the aroma with garlic, chili peppers, and olive oil, stir-frying the blue crab at high temperature and flambéing it with brandy. After bringing out the savory flavor, we add richness with homemade crab sauce and fresh cream. Please enjoy by savoring the meat of the blue crab.
Slowly simmered for 6 hours with beef brisket in red wine and demi-glace. Served with glazed onions and carrots, this is the classic beef stew.

When it comes to the specialty of Nakano in Shinshu, nothing can compare to apples. In the local area, apples are not something you buy, but something you receive. We have boldly prepared a baked confection using the locally abundant apples. It is called 'Tarte Tatin,' a tart made with apples from the Brittany region of France. The addition of 'Classic' refers to the method of preparation. To be frank, it is very labor-intensive. However, that effort transforms it into a rustic and sophisticated flavor that will impress apple connoisseurs. The pairing with vanilla ice cream is exceptional.
The 'Baschi' that took the world by storm is very delicious, so we have it available all year round. Enjoy it with maple sauce.
