This is our signature hot pot. It features a light soy sauce-based broth made with two types of our homemade tare and fresh, high-quality Japanese beef offal. We use small intestines with just the right amount of fat and nicely textured red beef tripe (pitch). Even the garlic is sourced from Aomori, showcasing our commitment to quality.
This is a spicy hot pot made by mixing Korean chili pepper and spicy miso into our restaurant's signature motsunabe soup. It retains the umami of the motsunabe soup while adding a moderate spiciness and richness from the miso. We can adjust the spiciness to your preference, so please give it a try. The 'cheese risotto-style zosui' as a finishing touch is also highly recommended!
