1. Cajun cuisine, characterized by spices. Once, there was a French Acadian colony in North America, and the French-speaking Canadians who lived there, some of whom migrated to what is now Louisiana, are referred to as 'Cajuns.' Thus, Cajun cuisine incorporates elements of French cooking. Okra also made its way from Africa to America. 2. Creole cuisine, supported by the wealthy, has a European style. While Cajun cuisine is more rustic, Creole cuisine developed in New Orleans, which had a particularly strong connection to France, and was favored by the wealthy. 3. Soul food born from slavery. In the past, during the era when Africans were brought to America as slaves, they had to survive on whatever food was available. The slaves cooked ingredients that their masters did not use, such as pig intestines, pig feet, catfish, and okra. Such dishes began to be referred to as 'soul food' in the mid-1960s. It was created as a substitute for escargot when there was a shortage, and the dish was named after John D. Rockefeller, the wealthiest man of the time, due to its rich flavor (2 pieces).
