Bringing the 'Phantom of Heian-kyo, a thousand years ago' to the present. A special shaved ice available in limited quantities each day. 'Shaved ice with sweet vine added, placed in a new metallic bowl' is a passage from the essay 'The Pillow Book' written by Sei Shonagon, and is said to be the oldest description of shaved ice in Japan. It translates to finely shaved ice topped with an ancient sweetener called 'Amaduzura', served in a new metal bowl. The phantom sweet 'Amaduzura-sen', loved by the Heian nobility, makes its appearance in 'Kyoto Ice Confectionery'. Behold... the syrup that recreates the phantom sweet 'Amaduzura-sen' is now available as shaved ice! Many of you may be wondering, 'What is Amaduzura-sen?' Amaduzura-sen is a very precious sweetener that was loved by emperors and nobles long ago. It also appears in Sei Shonagon's 'The Pillow Book'. It is characterized by its natural sweetness made from the sap of vine plants, and was used in various applications such as confectionery, cooking, and even medicine and incense. However, as time passed, Amaduzura-sen was forgotten by people and came to be known as the 'phantom sweet'. For the past 200 years, many researchers have devoted their passion to the quest for this phantom flavor. And finally, it has been revived in modern times. This precious syrup made from the long-lost taste of Amaduzura is now available for you to enjoy. The moment it enters your mouth, a gentle sweetness spreads, and the aftertaste is surprisingly refreshing. You may be able to experience the feelings of the Heian nobility across the ages. Furthermore, as an even older sweetener... we have also included 'Komeame', a syrup made from carefully selected domestic glutinous rice and malt, crafted using methods from the Nara period! Additionally, this year we have incorporated fig cooked in white wine and the scent of sandalwood, creating a cup that allows you to feel the Heian period while being in the present.
