One of the joys of a buffet-style meal is being able to eat as much eel as you like. We use the head of domestic eel to make a broth, and season it gently with honey and black sugar.
A natural menu that stimulates the appetite with the simple taste of morning-picked shiitake mushrooms. Made with dashi stock taken from Hokkaido kelp, Nagato-produced iriko, and bonito flakes.
Tempura always has a crispy texture of freshly fried. The reason is that it is fried each time an order is placed. Enjoy seasonal vegetables harvested from farms in Yamaguchi Prefecture.
