When Kobe opened its port, foreigners living in the foreign settlement spread the deliciousness of Tajima beef they tasted at that time by word of mouth, making Kobe beef an international sensation. The quality of meat that Mitsuyoshi seeks is one that has a solid umami flavor in the lean meat and a light, smooth fat. To maintain the level of meat quality, we regularly purchase high-quality female Kobe beef from contracted farmers, striving to minimize individual differences in meat quality. Why Kobe beef and Tajima beef? The three major Japanese wagyu, Kobe beef, Omi beef, and Matsusaka beef, are all primarily raised from Tajima beef as their base. The inherent flavor and texture of brand wagyu are deeply influenced by the lineage of Tajima beef. Our restaurant is committed to the pure umami of wagyu lean meat, using Kobe beef and Tajima beef. Every time I visit the farms of our contracted farmers and listen to their stories, I am moved by their pride as breeders and their love for the cattle. From the time they are calves, they name them as if they are their own children, always doing their best while caring for their health and appearance, which I feel results in the best cattle and the best meat. When I hold a knife, I pay respect to the farmers and the cattle, while also questioning what the best dish that can withstand that sentiment is. To allow you to savor the inherent umami of the meat, we season it lightly with salt, wasabi, ponzu, and a light sauce depending on the cut, which is one of the answers to that question. I will continue to strive daily so that everyone can feel the love of those involved with the meat.
