In a quiet space with 9 counter seats, the lighting is gentle and comfortable. The rice made from Niigata's rice has a warm texture, and the vinegar is elegantly balanced, blending well with the toppings. Appetizers and sushi are served alternately, allowing for an enjoyable pace. The squid is prepared with fine attention, resulting in a sticky texture, and the salt accent is pleasant. The tuna, both the lean and medium fatty parts, has a rich flavor that unfolds, while the red clam offers an interesting contrast in texture when combined with its siphon. The soup with a rich dashi flavor, the fluffy egg, and even the final pudding were all satisfying.
