Somen noodles are considered high-end the thinner they are, but this 'ultra-thin product' is difficult to make and can only be produced by skilled somen artisans, resulting in a limited quantity. Miwa somen's hand-stretched somen is generally thin, with a standard noodle yielding about 90 to 100 strands per 10g (approximately 450 to 500 strands per bundle!). The ultra-thin variety, 'White Dragon,' has about 130 strands! The super ultra-thin 'White Hair' has about 300 strands! Due to their artistic thinness, the number of somen artisans capable of producing them is limited.
