Based on the taste handed down directly from the original Shinpukusai-kan, which originated from a food stall in front of Kyoto Station, the recipe was improved to suit the snowy region of Tohoku where the previous generation was from, resulting in the flavor of Suehiro Ramen. It features a rich soy sauce base sent from Kyoto, medium-thick straight noodles that have remained unchanged since pre-war times, and thinly sliced char siu.
