The grits are made with shrimp stock, carrots, celery & onions, salt, pepper, butter and a splash of cream. We then add chopped baby sweet shrimp, red onion, garlic and our housemade Tasso ham (a Cajun specialty - cured pork richly seasoned with brown sugar, paprika, cayenne, salt & white pepper and smoked resulting in a firm, smoky, flavorful meat used for seasoning.)
