Ehikko Jidori chickens are raised by Mr. Yoshida in Ainan-cho, Ehime Prefecture. The feed is fermented by adding okara (bean curd) and beer grounds to the formula feed before feeding. He adjusts the feed according to the season in pursuit of the best quality. Male chickens are fed for 100 to 110 days Females are fed for 120 to 130 days. Fermented feed must create a good intestinal environment. When we visited the chicken coop, there was no smell at all. From rearing to processing, the whole process is managed in batches, and the meat arrives at the air market in a very fresh condition. Very pure taste! Binchotan charcoal is made the old-fashioned way. Binchotan made from the Ubamegashi tree in Minami-Minami Town, Tokushima, Shikoku, is combined with modern charcoal-making techniques. This binchotan is the result of Mr. Shiina's experience, skill, and knowledge as a charcoal maker.
