About the origin of Return Sushi: When the lord of Bizen Okayama, Ikeda Mitsumasa, issued a decree for simplicity and frugality, townspeople filled the bottoms of their stacked boxes with various ingredients, hiding them with rice so they wouldn't be visible. After the samurai left, they would flip the stacked boxes onto plates at home to eat, which is how it got the name Return Sushi or Hidden Sushi.
