For customers who "want to eat really good fish and sushi on a night out in Ito." Our restaurant's evening course (reservations required) is a special course in which our chefs, who know all about local ingredients, do everything from procurement to preparation for each pair of customers. The star of this standard course is a dish synonymous with Izu**: braised sea bream. The fatty, specially selected size of the sea bream is cooked plumply in the broth that has been simmered over and over again. The second half of the course features "red vinegar sushi "** made by the owner of the Michelin-starred restaurant. Enjoy the "freshly made sushi kappo" served over the counter with carefully selected sake and wine, which is a far cry from ryokan kaiseki cuisine.
This is a masterfully crafted specialty created by our artisans, who use the “dehydration process” (shime)—a traditional Edomae sushi technique—to concentrate the umami flavor of locally caught fish harvested that very morning. Please enjoy the supreme flavor created by the combination of the fish’s firm texture and our special sauce, not to mention its exceptional freshness. Another highlight is the textural contrast with the colorful accompaniments, such as cucumber and egg. While convenient, this dish allows you to fully savor the quality of an authentic sushi restaurant right at lunch.
